Lapsang Souchong is a black smoky tea that comes from the Wuyi mountains of the Fujian Provence. It has a hardy smoked aroma and flavor, that is produced from the smoking process of placing the tea over a high resin pine wood fire to infuse with a natural smoky flavor. Chefs love to make a strong brew of this tea and marinade meet for grilling. It can also be mixed with sea salts and other spices to make a natural smoke rub. Pairs well with anything pickled, especially olives, artichokes and capers. Serve hot with a simple syrup made with brown sugar and maple syrup. Or infuse the dark simple syrup with a bit of Lapsang tea.
